Opening Fonda San Miguel in 1975 was an uphill battle – working to earn the appreciation of diners accustomed to Americanized Tex-Mex staples like shredded lettuce and orange cheese. However, the high standards remain uncompromising, adhering to authenticity, importing many Mexican ingredients and eventually planting its own garden on-site. With its dual focus on food and art, Fonda San Miguel continues to flourish and its long-range impact on Mexican food in Texas and the United States continues to garner national and international acclaim.
